This bean originated in the Northeast and is still popular today. It was often called the Trout Bean because of its coloring. It is a plump bean and a member of the Kidney Bean family with red and brown specks. They are dense and meaty holding their shape well during extended cooking. Known for their distinct flavor which is described as meaty, dense, fragrant, rich, and nutty, its flavor is still prevalent even when baked with a lot of seasoning. Great for soups and stews as well but prized for its qualities as a baked bean. Our friend Betsy tells us that she grew up with these beans and both she and her Mom still bake them today.
